Rooted in the land and rich history of the area, Prospect offers an epicurean journey through our local terroir, from the mountains to the rivers, pastures and ranches alongside the agriculturally rich flatlands. The journey consists of a thoughtfully selected progression of bites, dishes and shareable courses that, together, tell the story of our land and offer an unparalleled sense of place. Our cuisine is focused on the bounty and diversity of microclimates surrounding the town of Aspen. In addition, an optional beverage pairing is available which further tells the story of our land. The menu features a collection of four or seven expressions that create an epicurean journey through the diverse microclimates of the area.
